The National Center for Food Preservation does indeed warn that there may be some risks associated with vacuum sealing food products. As long as you follow a few simple food safety tips, you will be able to avoid the bulk of these risks and minimize the remainders. Remember to always wash your hands before and during the vacuum sealing process. You want to keep all the cutting boards, counters, knives, utensils, etc clean before doing any vacuum sealing — especially if you are doing packaging in bulk. You still need to run water over the food and clean it before packaging them.
